Here's the add-in. Copy it to C:\Documents and Settings\(username)\Application Data\Microsoft\AddIns, or wherever your add-ins live. Then open the demo workbook (earlier post), install the add-in, and do Tools | SurfaceSolver to bring up the form.
The form lets you select a variety of fit types, or you can choose your own coefficients. Note that one of the modes generates array formulas that compute the surfaces from the solved coefficients, more or less like like a 2D version of SERIESSUM.
The surface in the demo was generated with random numbers and then filtered a couple of times to smooth it out.
I don't know that this will find widespread use, but hope some of my friends here find it useful.

There's an updated add-in that addresses (I hope) regional settings that use a comma as the decimal separator at https://app.box.com/s/twlo4d44wm8d6aee1f39

Thanks SHG - Seems like you could do some fairly cool animations there with a simple for loop... it would be cool, but maybe a bit useless...
