Time Calculations

I need to calculate the following:

Cell A is a start time, example 18:00 (6 pm)

Cell B is a stop time, example 01:00 (1 am)

How would I write a calculation that would reflect the 7 hours that this job ran?

The secret to working with times is that Excel counts time in units of days. For your problem, assuming the elapsed time is less than 24 hours, use the formula
=IF(A1>B1,1+B1-A1,B1-A1)*24
which will give you the number of hours (with fractions of an hour if needed)
